Had some oatmeal the other day at a place here in town "had the name EGG something" anyways I saved it will use a mortar for the build out when the day comes, it was just made with no love.
Back in the spring I made this Oatmeal on my trip to Tucson for a big fiftieth brunch party and from now on its the only oatmeal I eat.
Stone ground Oats toasted in the oven, Then I add to a pot and add flavored water in stages to allow the natural creaminess of the oats. It comes out money, the flavored water is more a stock of dried vanilla beans, cinnamon stick, star anise, apple trim, lemon peel and water brought to a boil it has so much flavor the oatmeal just explodes in your mouth.
When we open we will make the night before then allow to cool in a pan, when cool we will portion and then when the order comes in we will add a touch of milk or stock and re-heat nice a creamy.
Served with sautéed Fuji apples, and Warm Vanilla Anglaise, Crunchy Granola, and Cranberry Bread Croutons.
I actually heard a friend in the kitchen say "this is the only way oatmeal should be made" once I heard that I know we have a keeper.
Need to find a bowl with a lid, sort of like a steamed rice bowl, with a small hole so condensation doesn't build up while going to the table, then remove the top right under your nose so you get that smell right in your face. To me that is what oatmeal is all about just like the Quaker Oat picture.
The last picture is for the grab and go, it will be pre-portioned just pour into a bowl and re-heat. Maybe one day it will be in a store and everyone will have the chance to eat really oatmeal.
